you can read Employee Motivation, theory and practice at http://www.accel-team.com/motivation/index.html
and a page with motivation theories at http://www.accel-team.com/motivation/index.html and http://www.businessballs.com/herzberg.htm, and understanding employee motivation at http://www.joe.org/joe/1998june/rb3.html

Talk to a store manager and tell him what your project is. He/she may let you interview the employees. Talking to the people is the best way to get a real answer. Prepare questions ahead of time and offer some sort of incentive for those willing to speak with you. Confidentially is a must in all discussions.
